
Kumquat Marmalade
| 2 | cups | kumquats, whole |
| 1 | tsp | baking soda |
| | boiling water |
| | cold water |

| 3 | cups | water |
| |

| 2 | cups | sugar |
Wash kumquats. Sprinkle with baking soda, and cover with boiling water. Let stand for 10 minutes. Drain, then rinse in cold water.
Separate kumquat fruit from skin. Discard seeds. (It's okay if some seeds remain.) Slice skin into very fine shreds. Process kumquat flesh in blender or food processor. Place kumquat pulp, juice, and skin into a pan and add the measured water. Simmer uncovered for 20 minutes. Stir in sugar and simmer uncovered until it reaches jelly stage. This could take over 30 minutes.
Refrigerate marmalade, or follow standard canning instructions which you should be able to find elsewhere.
